Today's shoulder with Qview

This is my first attempt at posting a Qview and my second attempted at smoking a shoulder. I hope it comes out ok. I started last night with an 8lb shoulder. I will be smoking it in my MES
1. I first trimmed the fat cap.
2. Injected with a mixture of apple juice, apple cider vinegar, chicken broth, and a little my rub. Covered with foil in a bowl and put it in the frig overnight.

3. Pre heated the smoker. While waiting for my MES to come up to heat I rubbed down with a thin layer of mustard and then a layer of my rub which is a modified made from Jeff's recipe and an apple rub recipe I found some where.

4. Got it going at about 6:30 am this morning. Started the smoke at about 225 degrees using 2 pcs. of charcoal and a hand full of apple dust. This is a picture after an hour in. The internal temperature was 99. I sprayed with a mixture of apple juice, apple cider vinegar, and a little rub.

5. Sprayed again 3 hours. The internal temperature was 137. I added a hand full of hickory chips.

Thanks for the replies. After 6 hours I am at 159 degrees. I am planning on foiling when temp hits 165.

7.5 hours 165 degrees. Time to foil.

Nice! A little spray of apple juice and rum in the foil and you're rockin'!

Nice looking butt you got going there! I see you got your MES rockin at 227....how is your temp control on your unit. Mine seems to be off by about 40 degrees on the high side.

I have heard that from a few people who own the MES. I think I got lucky with mine it is almost right on according to my oven thermometer.

Out of the foil.

Pulled. Pretty happy with the results. Very tender and very moist.

Plated and ready with fried corn and baked beans.
