Not done in the smoker(looks like this section has some deep fried, and roasted posts), but deep fried, twice.
Figured some might enjoy these wings, I sure did, crunchy, sweet, and hot. The secret was the batter, and deep frying them twice, once @ 350, and then a second run @ 375.
Marinated the wings in:
- milk(1 cup),
grated onion(1),
soy sauce(1 tbsp),
garlic(4 cloves),
ginger(2 tbsp),
black pepper(1/2 tsp)
Before marinating, I made 2-3 slices in each wing piece to help the marinade penetrate
The batter is:
flour(1/2 cup),
corn starch(2/3 cup),
baking powder(1/5 tsp),
salt(1/4 tsp.),
black pepper(1/2 tsp.),
sugar1.5 tsp),
ice water(1 cup)
the sauce is:
toasted sesame seeds(1/2 cup),
Shark Sriracha(6 tbsp),
Rooster Sriracha(6 tbsp),
El Yucateco Habanero(1 tbsp),
3 whole serrano peppers,
ketchup(12 tbsp),
garlic(5 cloves),
ginger (1 tsp),
soy sauce(1 tsp),
sugar(1/2 cup),
lemon juice(5 tbsp).
SUch an easy sauce to make, cant see buying any asian style sauce loaded with salt, and hfcs, etc.
fried @ 350 for 6 mins, and then @ 375 for 4 mins in batches
