Brocholi, Cheese & Mushroom Soup

Just for you, Fire it up...and everyone else of course! LOL!

Main ingredients:

8 oz Cheddar Cheese, medium or sharp, fine grated
1 lb Brocholi, fresh or frozen, cut into 1" to 1-1/2" pieces
8 oz Button Mushroom, fresh, sliced thin
2 cups milk, whole or 2%
4 oz butter or margarine
3/4 cup water

1/2 tsp Garlic Powder
1/4 tsp black pepper, fine grind or powdered
1 Tbs Parsley Flakes, dried (3 Tbs if freshly chopped)
1/2 Tbs Kosher Salt

***optional*** 1/4 to 1/2 tsp cayenne pepper or your favorite pepper/chili powders if you desire some extra kick, or sprinkled into the bowl as a topping.

Put water and salt in a medium stockpot or large saucepan and bring to a boil. Add Brocholi and Mushrooms, reduce heat after boil returns, cover and steam until Brocholi is aldente to tender (not too soft).

Add milk, all seasonings, butter/margarine and slowly heat through to simmer. Avoid scorching the milk by slowly stirring frequently.

Add grated cheese when a slow simmer is reached and continue slow heating/stirring until a smooth consistency is reached.

Bowl and top with Oyster Crackers or your favorite saltines. Bacon chips and/or chives may be added to the topping along with more grated cheese for some extra texture and flavor.

Makes approx. 3 to 4 servings.
