I used to nail this when I only had a Weber kettle...

I went a looonnngg time without cooking any fish. Now, the last two times I've cooked (w/ Smoke) salmon, i have over cooked the sh*t out of it until it turned to sawdust when I cut into it.

How long on medium heat in a Weber Silver A on a cedar plant w/ lid closed?

The way I used to cook it was on a cedar plank and smoke @ 220. But I have no clue how long I smoked it (this was prior to me having gauges)
