Cheers from Colorado

Cheers to everyone from Colorado!
I bought my first smoker last week from Bass Pro Shops. Picked the Great Outdoors Smokey Mt Series.
Had the opportunity to fire it up today for some baby back ribs. I applied a rub last night that included brown sugar, season salt, paprika, chili powder, cumin, nutmeg and cinnamon. Put a little yellow mustard on the ribs first, then sprinkled them with a little apple cider after the rub. Wrapped them up and put them in the fridge overnight.
Today I put a mix of apple and hickory in the smoke box and fired her up. Once up to about 220 deg, I put the ribs in. I had a tough time regulating the temperature. The snowy cold weather today seemed to be a part of the problem. Eventually I got it pretty leveled out around 210-225. They went about 4.5 hrs. I did mop them a couple times with a mix of olive oil and apple cider. Out of the smoker, I mopped them again and wrapped them up in foil for about 40 minutes (waiting for the family to get back for dinner).
My wife and I loved them! We are officially hooked! Even our picky kids ate them up. hahah Some cheesy corn muffins, smoked baked beans and cole slaw rounded the meal out to perfection.
Enjoy the photo. Sorry for the quality, I just grabbed my camera phone and snapped one before pulling the bad boys out.
I really look forward to sharing and learning here.

Where in CO? I went to college in Denver at the Colorado Institute of Art. I used to live about a block from the capital for a while then out in Lakewood right where it meets with Golden.
