Hi Folks

Just finished up a brisket experiment I'd been wanting to try.
Decided to vacuum seal it with the rub for 24 hours before smoking, and when it got to 160 internal, instead of foiling it like I usually do...pulled out an oven bag, put it in with some apple juice and jack daniels then finished it for two hours.

Let it rest and sliced...got a very tender brisket with a good smoke ring, but really didn't notice too much difference between the bag and the foil.

Bag makes a little less mess for sure, but I did not discern any major difference in texture or juiciness.

Bottom line is...guess it doesn't matter

I have tried the oven bags on several things since the wife bought some and haven't really found any difference either
