Bear summer sausage w/mozzerella cheese

Hello everyone

Yesterday i made 25 pounds of jalapeno summer sausage with mozzorella cheese i used 17 pounds of bear meat and 8 pounds of pork butt i used pre mixed season from ps seasoning i smoked it with hickory it took 12 hours to get it up to 160 degrees it turned out great here is a pic

Man that looks good. Did you use high temp cheese in that?

Looks great! I love summer sausage but have never ate bear. Interesting!

yes i used the hi temp cheese in the sausage i got it from butcher-packer supply

Bear meat is great stuff i really like it and the sausage is real good to

Bear meat is awesome for sausage! I have made a few types of sausage with it. Better than most game meats when ground up in my opinion.
