Wild pig and peppers

I started with wild pig about 1/4 inch thick. Then a thin layer of marble cheese and then some asiago.


Love the peppers and onion.

Smoked with my new favorite Birch

The peppers sure added some "tang" to the fatty, and I love the cheese choice!! Nice looking fatty.
