Yep I agree. KISS, keep it simple stupid.

I guess for me, you will have to clarify the question...If it is about spices, it would have to be garlic, salt, pepper. But, it it is open to other food/drink as a compliment, that would be onions, mushrooms, merlot (or Cab/Merlot)!

That's a tough question!

I posed it to my wife and she-without hesitation- replied mushroom, garlic and onion!

After trimming my list, I'm left with Kosher Salt, Cracked Black Pepper and Granulated Onion.

....And yes, it has to be large grain Kosher, fresh peppercorns and granulated onion, not the powder dust!

you're right, guys - the answers look great so far, but some clarification would probably be necessary.

i am intending this question as a seasoning for beef. by seasoning, i mean in the form of herbs or spices to be applied to said beef for slow-smoke cooking - i suppose it could also mean anything else (such as liquid) that could be applied to the beef.

what's the beef?

brisket, of course!

salt pepper and?-use fresh garlic and onions shroons-what would the ? be-depends on what flavor your looking for-heat tang or other?

Didn't consider these...definitely top choices to compliment beef.

Used these exactly on on some filets this past weekend. Also rubbed them with pure maple syrup first.

I definately agree with and highly recommend the pure maple syrup...I've used it myself was impressed with the results on roasts.

Also, I have to agree with garlic and pepper...heavy with both.

EVOO
Crushed Garlic
Onion Salt
...are my 3 favorites as a spice to apply

Sauted Sweet Yellow Onions
Melted Smoked Gouda Cheese OR Maytag Blue Cheese
...are my favorite "toppings" for beef. But more for a steak than a brisket.

Now for a brisket spices I like are
Paprika, Granulated Garlic, Onion Salt

Ditto Dude on all of these. If I could have a 4th it would be a bit of rosemary for the brisket (I know it's more traditionally a lamb spice, but I like it in small amounts for beef too).

I have to run with the pack and say:
kosher salt
fresh ground pepper (heavy dosage)
Grandulated garlic power
But really how can you stop with onion powder and creole spices.

1. Cumin

2. Horse radish

3. Garlic

4. Mushrooms

5. Butter

6. White pepper

7. More Garlic

8. Onions

9. Corn

Is that three yet?

I am not wrong cause I don't make mistrakes.
