That Skinless Wild Turkey

HEY THERE! Just wanted to let you know that the wild turkey I smoked last Saturday came out great! The bacon wrap worked very well! The white meat was moist and extremely good. The dark meat....not so much! But I didn't cover it with bacon, it was dried out and nobody ate it...didn't save it either.

Overall though, our guests (who supplied the turkey) and us were very happy and they thought it was the best tasting turkey they'd ever had!

Thanks allot!PDT_Armataz_01_37.gif

Could have used the dark meat to make a stock! I always thought that a wild turkey is pretty much all dark meat.
