Yes. 17 hrs total time is about right. I was referring to 15 hrs smoker time.wink.gif

I got one goin in tomorrow, a 9 lb-er. Gettin up @ around 3 or 4 a.m. gonna b a goodie, got her rubbed, wrapped and chillin in the fridge.

Also dutches beans, and a slaw that is killer!!!!!!!!!!!! here is the recipie :

1/2 cup heavy cream
1/3 cup sugar
3 tbls white vinegar
1/2 tsp salt
3/4 cup mayo
5 1/2 cups slaw mix " I used a whole head of cabbage and small red cabbage for color and 1-1/2 carrots also for color" so i doubled the recipie.
1 cup pineapple bits.

in a large bowl wisk together the heavy creme, sugar, vinegar, salt, and mayo. Add the slaw mix and pineapple and toss together with the creme mixture.

If you want @ 165 double foil and put in the oven @ 225 till you reach 205. save on the charcoal and wood.
