Man just got done with chicken thighs and they were great. Soaked the in a brine last night for about 6 hours. Then when I got to work at about 12:30am I dumped out the brine and pulled the skin back and sprinkled poultry rub on them then layed the skin back over. Put them in the smoker at about 9:00am with cherry and hickory chunks at 250 degrees. About 11:00 the thermo read 172 so I checked on but it wasnt done yet so I put it up to about 300 till 11:30 then put them on the grill to crisp up the skin. They turned out so much better than I thought, way better than the breast I did a few weeks ago. I will do these again for sure.
