Hi guys. I've never smoked or even eaten smoked food, but I've been watching way too many episodes of Diners, Drive-ins, and Dives to not jump into this. I'm looking at a GOSM. Something's gotta take up my time when I'm not homebrewing!

Newbie questions:

1. What is a flat?
2. What is a foil pan?
3. Can someone recommend a relatively inexpensive thermometer w/ alarm and remote pager? I assume this is necessary?
4. Basic rub recipe?
5. I've read when the meat is done, you're to cover it and put it in a cooler for an hour or two. Afterwards, are you supposed to serve it room temp?
