First butt has finished. Target temp 200Â°F. Toweled and coolered for 2 hours. Falling apart on the cutting board. Notice the pan of liquid from the foil in the pan in background. The pulled pork re-absorbed that. This butt had a fairly good yield. 4 lbs-12 oz finished product from a 7.8 lb butt.

One more butt plus the beef to pull later. Will consume the beef tomorrow. Pork is heading for the freezer.
