For pulling you want to get it up to at least 195°

Here is a link to a pulled pork primer that should help.

Take care, have fun, and do good!

Final Q-View!

First butt has finished. Target temp 200°F. Toweled and coolered for 2 hours. Falling apart on the cutting board. Notice the pan of liquid from the foil in the pan in background. The pulled pork re-absorbed that. This butt had a fairly good yield. 4 lbs-12 oz finished product from a 7.8 lb butt.

Pan-o-Pulled-Pork!! (I sampled freely! Yum!)

One more butt plus the beef to pull later. Will consume the beef tomorrow. Pork is heading for the freezer.

Hope you all had a smoky day!

Take care, have fun, and do good!
