So - I was not a big meat eater in the past. Was never a vegetarian, but I liked cheap food and junk food a lot. So much, that I got to about 350 pounds. So in 2003 I started eating low-carbohydrate and dropped 100 pounds of that.
But low-carb can be a boring way to eat, so I got more interested in cooking in general, then in smoking. How could I make a meat-heavy diet more fun?
I made an Alton Brown style "flower pot" smoker (that is still a damn good rig) and a friend got me a Cameron's stovetop smoker for Christmas a couple years ago. Last year, I added a Smoke Hollow electric smoker -- the flower pot one was okay, but couldn't handle larger cuts.
So I've done a bunch of smokes now - briskets, ribs, fatties, chicken, and salmon. I'm busy. Have a demanding job and a family, so I don't get to spend the time I'd like.
I like the electric smoker because it's convenient. I can work on the house, check work email, and not worry as much about temperature. I live in Broken Arrow, Oklahoma, live and die on OSU sports, and have enjoyed reading these forums for a while before posting.
