Going to smoke a 10lb. turkey on Saturday first one ever. Do you butterfly it to smoke faster or should I just set it on the grate and smoke. I was thinking smoker temp around 275 and cook the bird till 170. Any comments or suggestions would be appreciated.

Thanks
