Been lurking for a month or so, finally decided to hit roll call. Most of my smokin has been limited to brisket and german sausage for the last 15 years or so but since checkin out SMF I have ventured out to try my first butt, cornish game hens, and trying my first prime rib tomorrow for my anniversary/New Years. Equipmet I have are MES, GOSM, and one huge behemoth wood burner with gas assist mod that I borrow once in a while from our vol fire dept that we have nick named the beast.
Looks like alot of great info on the site, look forward to trying more and more as time goes byl
 
Welcome to SMF. Pull up a chair and listen (seems like ou already have) Just remember we like pics of what your doing and even when we make misakes others learn too if we share them,
 
I'm digging through old posts on prime rib looking for any and or everything I can find.
There is a local resturant herin Lubbock that serves a great mesquite smoked prime rib. Wife loves it so that is what I am going for.
It is 4.5lb only using salt and pepper going for med. rare and am catching the drippings for au jus.
Thanks in advance for any shortcuts to threads that might be hepful or personal opinions

First off, Welcome to the forums. Next if you check the threads under beef you should find some post on prime rib. There have been quite a few done recently. Goodluck and remember q-view.

Welcome Lawdog. Just curious if your moniker means you're with the PD there in Lubbock? I worked at a pawn shop out on Ave A back in the late 80's when I was going to TTU. Had quite a few of the local PD stop in for coffee on a regular basis. BTW, what is this restraunt of which you speak? 50-yrd line?

I know where you are talking about, across from the fairgrounds. Closed down a few years ago, man they always treated us right in there. I think the owners were also owners in arctic air and have gone to straight heating and a/c, may be wrong but I think that's what they are into now. I don't work for LPD, a little bedroom community east of Lubbock called Ransom Canyon. The resturant is Harrigans down on 50th. I used to live by the previous owner but it shut down and reopened under new owners, almost as good as the old one.

Good to know there are a few brothers (and/or sisters) in blue hangin around. Just keep going through old posts and have several more things I want to try in the next few months, weeks, days, well anyway just as soon as I can get around to it, the sooner the better.
 
Harrigans :) I've certainly been there. Ransom Canyon too. Used to hang out at the lake during the off hours from school to decompress a little. As for the pawn shop, I stopped in there a while back to see the guys and they had closed up. Their mother pretty much owned the place and I guess when she passed on, they closed it up. Got some funny stories to tell about those times :)
