In the Mountains of Western Pa
This is my first attempt at a turkey..Brined it overnight in a salt, sugar and garlic brine..Covered it with mayo and then used Jeff's rub..stuffed with Granny Smith Apples and basted with a butter and garlic salt baste...11.7 pound turkey took about 3 and a half hours... Smoked with pear wood Got a little dark on the wings, but that is fine with me...My lady is making a corn bread, sweet sausage, apple and cranberry dressing..The Turkey is absolutely delicious! Cooked on my Brinkman gourmet charcoal converted to propane with a v-burner.. 36 degrees outside with a lot of wind and rain..
Thanks for everyones posting here....I read until my eyes bled before I attempted the turkey

Good looking bird, itâ€[emoji]8482[/emoji]s just passed noon on the west coast where I am and I still have work to do. I hope mine turns out so well
