Hi to all. I am just starting. I read what I could before I made some baby back ribs last weekend. I used a Kansas City Rub, removed the membrane, wrapped them in cellophane all night, then used the 2-2-1 method with applejuice spray every 40 minutes, then foiled them with apple juice for 2 hours, then I put sauce on them for the last hour. They were good. I read on another site(a crime I know) that you should leave the membrane on because it holds more juice in and that the smoke will get in whether it is on or off. That's my first question, membrane on or off? second, is foiling worth it, or should you just put them on with a good rub? I wonder what the competitive people do. Both ways can't be right. Thanks in advance

You read on another site? HERETIC!!!!! Actually, I've had membrane on and off. Prefer off and the 3-2-1 method. I can't imagine my ribs being any moister unless they go liquid on me. But, the only way to know what you like best is to give the method a try and let us know.
 
First thing I have to say is that if you ain't competing and you like what you produced.. then it was the right way to do it.

Don't get stuck needing die hard rules to produce Q. If you do you'll give yourself a headache and won't ever believe you did it "right".

Membrane is a matter of choice NOT a matter of fact. If you don't mind tearing the membrane off then take it off. It makes them better in my opinion. I don't like the membrane on my finished product.

Foiling is also an option. True die hard competition, get it right or crash & burn trying smokers won't foil. It helps to make the ribs fall off the bone tender (it steams the meat). Try it both ways and form YOUR own opinion as to what is the correct way to do it.

As long as we're on right or wrong... some will tell you if you ain't cooking with strictly wood then it's wrong. Hogwash... Use what you have to make great Q. Be it a full blown wood smoker down to a box and a light bulb. If you can get smoke you are on your way.

Hope this helps out some. Just relax and let the smoke happen.
