Coleslaw - Sugar Free

Got a diabetic father-in-law, and we made this the last time we smoked some pork with him, and it came out great. Anyone who's trying to keep it healthy might want to give this a shot too.

1/3 cup Splenda granular
1 tsp salt
1/2 cup fat-free mayonnaise
1/2 cup low-fat buttermilk
1 1/2 tbsp white vinegar
2 1/2 tbsp lemon juice

1lb shredded cabbage and carrot bagged coleslaw

Whisk together all of the sauce ingredients, and then combine with the bagged coleslaw. I like to put the bagged coleslaw and sauce in a tupperware container, seal it up, and then just shake the crap out of it.

It comes out the best if you make this before you fire up the smoker, and let it sit in the fridge while the smoker's going - that would be the case for any coleslaw though.

This is very easy to make and only makes about 6 servings, so if you've got a few diabetics or health nuts coming over, they'll really think you're a stand-up guy for having them covered.

Who am I to deny someone their pulled pork and coleslaw?

That is indeed where the name was derived from... and therein lies my personal conundrum. I'm a redneck that likes Devo. Trust me, there aren't many of us that will admit to both at the same time.

BTW, I can't even begin to tell you how much fun I had making that picture up for you!

Thanks for listing the sugar free coleslaw. Don't have anyone right now that can benefit, but have worked with diabetics in the past and knew many who went without at company picnics due to the disease. I'll put this one in my files for the future.
