Spanish Rice

I'm looking for a authentic spanish rice recipe, does anybidy have one?
I'm making Dutch' enchilada recipe this weekend and would like to serve as aside dish.

Here you go ....

Spanish Rice

·2 tbsp olive oil (can use up to 1/4 cup)
·1 onion, chopped fine
·1 garlic clove, minced
·2 cups of medium or long-grain white rice
·3 cups* chicken or vegetable stock
·1 heaping tbsp tomato paste or 1 cup of diced tomatoes, strained
·Pinch of oregano
·1 teaspoon salt

*Check the instructions on the rice package for the proportions of liquid to rice. They can range from 1:1 to 2:1. If your rice calls for 2 cups of water for every cup of rice, then for this recipe, use 4 cups of stock for 2 cups of rice.

1.In a large skillet brown rice in olive oil, medium/high heat.
2.Add onion and garlic and cook, stirring frequently, about 4 minutes, or until onions are softened.
3.In a separate sauce pan bring stock to a simmer.
4.Add tomato sauce, oregano, salt, and rice to broth. Bring to a simmer.
5.Cover. Lower heat and cook 15-25 minutes, depending on the type of rice and the instructions on the rice package.
6.Turn off heat and let sit for 5 minutes.

Serves 4 to 6.

Here's mine. I have served it with Dutch's Enchiladas.

Here is the Q-View.

My Spanish Rice

1-cup long grain white rice
3 TBL oil
1 small onion diced
8 oz. tomato sauce
1 TBL chili powder
4 oz. diced green chilies
2 ½ cups chicken stock and/or water
4 oz shredded cheese (Jack, Colby-Jack or other)

Sweat onions in oil until soft
Add rice and brown lightly (about 2-3- minutes)
Add remaining ingredients except cheese and bring up
Simmer 50-60 minutes until rice is tender
(Add additional liquid if necessary)

Put rice in an 8”x8” baking dish
Top with Cheese
Cover with foil
Bake at 325F for about 30 minutes or until hot and cheese is melted

Meowey that looks great i was looking for a tried and true recipe. I hope my setting is nice as your's adain that looks great!

Where is Dutch's enchilada recipe?? Or do i have to pay for that one, cuz it looks so good i wouldnt doubt if there was a small charge for it.
