Just a 27 year old married man who loves the Lord and is able to enjoy my new found hobbie of grilling and smoking. Bought a chargrill double play 5 months ago and used the charcoal side only and never used the propane side. I used the propane side to store things so I decided to get rid of that since it was a waste of space and I wanted to learn to smoke so I went ahead and just this past week got the chargriller 8125. I'll be honest don't know how to start on it. I know these things are cheap but before I invested 2k-4K on a nice piece I wanted to make sure I enjoyed to smoke stuff. I've seen the mods for them, but I haven't seen any mods for ash pans or a plate that could cover the hole from the fire box to the smoker so I could just use that as a mini grill. If that's a dumb idea then let me know lol.

Former Mansfield TX dude here...You can take an intermediate step and buy and nice $300-$500 smoker.  There are many options.  I have both an offset and an electric smoker.  I use my offset (ancient Brinkman smoker) for high heat smokes and my electric for low and slow.  Both have advantages...
