Hi all,

Thought I'd do a quick post of a pork butt I did yesterday. I recently replaced my regulator on the Masterbuilt Dual Fuel smoker with one that has a needle valve from Bayou Classics. It seems to really hold the temp coming from the propane burner a lot better than stock. I never touched it once I had it set.

I got a butt from my local meat shop, thanks Miller Meats! Being that the smoker itself isn't huge, I got him to cut me about a 5-6lb butt. Got the smoker going and then got the butt unwrapped and seasoned.

I tried some Tennessee Apple butter and then hit it with a Texas style rub...in hindsight, I would have used more of the Texas rub on it. Got it in the smoker around 9:30 AM and was trying to keep it around 275 F.

After five hours, that's how she was lookin'...time to wrap it in foil.

I had it wrapped for about two hours and it was at around 200 F, so I pulled it out and let it rest for about an hour.

Looked pretty good for a first time! Got it pulled and ready to serve!

That was some tasty BBQ!

Tell you what ,, that looks fantastic .. serve it up on a bun, with favorite BBQ sauce , and a great big tablespoon, maybe a humping tablespoon of cole slaw right on top.. and you have something going on ...

Michigan here, we like a tangy vinegar tomato sauce. Not to thick.. but something that will caramalize on a hot skillet if heated up for leftovers. Slap the darkened bits mixed in the sauce and shredded chunks..on a fresh soft bun.. Cole slaw.. that's it! Gimmy some potato chips too!

Thanks everyone for the thumbs up! I was really happy with how it turned out nice and juicy and the rest of the family ate it all up! For a sauce, we used this low carb sauce from Chef JimmyJ: http://www.smokingmeatforums.com/t/142326/low-carb-bbq-sauce/20 (Scroll down toward the end of the page). We put that s**t on just about everything! Hahaha.

Next big thing will probably be a brisket...time to do some reading!
