Spelt Flat Bread Dessert

  • 2 tbsp. olive Oil in flour
  • ½ teaspoon Kosher or Sea salt
  • ¼ cup Date Sugar
  • 10 dates chopped
  • 2 cups water
  • 1/4 cup olive oil

Whisk flour, 2 tbsp of olive oil, salt and dates together in a bowl.

Add water and date sugar, whisk until smooth. Cover bowl with a towel and set bowl aside.

Pour olive oil into a 12-inch cast iron skillet and place in oven until oil is hot, about 5 minutes. Pour batter into oiled skillet.

Bake in the preheated oven for 20 minutes. Flip flat bread and cook until browned, about 10 minutes more.

For the date sugar I just blended some dates with a tad of water.

This makes a nice little sweet healthy snack when I'm craving sweets.

Spelt Flat Bread Pizza Round 2

This is a great way to recycle that old chicken in the fridge, them sad looking mushrooms, or some roasted broccoli no one wants, that green pepper that's getting a bit pruney looking, let each person choose their own ingredients.

Its also a great way get more veggies in and reduce a bit of the carbs from the diet.

We also have made these with wheat flour and I'm going to experiment with making a Cauliflower flour and an eggplant flour.

Looks great, you guys are really making me think hard about getting my grandmothers CI out and seasoning.

The first recipe is a batter and comes out sweet. I eat this like a sweet bread or Banana bread.

The 2nd recipe is meant to be a standalone flat bread recipe, in other words the flat bread is the finished product, I like it as a standalone flat bread and since we were trying to eat a bit healthier we started using the recipe for flat bread pizza, it's really tasty because the bread itself is very flavorful. Also for recipe #2 you cook it on a dry Skillet so no oil either.

I started adding Ground Flax seed as a healthy choice. (you can sub Ground Flax seed for oil) But after I read that Ground Flax Seed looses its healthy attributes when heated, hence "cold pressed" I went back to the recipe posted here.

I don't know where I got the original recipe but I believe it also had a pinch of cinnamon.

The only thing my wife hates about this recipe is that you really have to work the dough, thats why sometimes shell grab the wheat flour
