So I am cooking 2 pork butts and 4 racks of spare ribs with a friend for a friendly competition against 2 other guys. Other staff will vote on a winner so there's a lot at stake. I will start the cook tonight and then we will eat Tuesday around 6pm. Have about a 2.5 hr drive so will wrap everything and put in cooler.
While at the store, I saw this brisket point and though it would be great to have while we are cooking. It's 2.44lbs and only cost $6.50!! I will add more pics as the day goes on but heres a pic of the point. Enjoy!!!

Yep. And probably the ribs on a Bradley smoker. Using pecan and oak mix.
Can't wait until my offset smoker is done. Here it is. Getting axle moved back and hen off to sandblasting and painting.

This is a pic of how I use my weber gas grill to smoke. Did 4 butts on here. I keep one burner on with a cast iron box with oak/pecan mix of pellets along with chunks of pecan. Works really well. Pretty much once I get temp correct it's set and forget.

Thanks noboundaries!!! I know I'll put out great food but you never know about the folks who are judging and their palettes!
 
I actually work with teens in a ministry called Young Life and had 5 guys help me in a BBQ competition in April. They loved it and we even got 20 out 33 teams!
 
You think all the fat will be rendered? I guess people like burnt ends because it gives the fat longer to melt. [emoji]128526[/emoji] oh.. plus sweet yummy charred bits.

Yes I am. Then will put the ribs on around 6am to have ready for an 11:30am departure to our staff conference
 
Well I just got back from a staff conference and then a U2 concert in a New Orleans with my wonderful wife.
There were 39 people at our staff conference that voted on the best BBQ and I won. Pretty fun deal. Got this golden BBQ brush as the winner.
