Hi just joined from over in Ashy de la zouch , Leics, UK.
Looking to tap into your American knowledge and history re smokers. Looks like I've come to the right place.....
Not sure where to place my first thread that will show what I've built and design flaws that need attention --- thanks in advance

A smoker that big, for one thing will take a big fire, also will take a good draft .. you need a door in the fire box with a big vent, also a variable stack to get that heat/smoke to your chamber .. try and leave the fire box door open and see how hot it gets ... open up stack allthe way, .. if too hot then, close door partially, and stack partially ... if this works, cut a big vent in fire box door, and add a vent that you an adjust .. my fire box has 3 vents on it ...
 
Great that's the advice I needed.... bottom door it is. I can adjust pull of chimes easily by blocking it or opening it up by sliding it open. The door I'll build with some sort of slotted vents.
I'm assuming then the idea is to build a good fire to get the heat up. Any advice for then maintaining heat? Just keep topping up with coals and soaked chips?
 
will take a good fire to smoke on a rig that size ... my smoker takes about 45 minutes to get to just 200 degrees, ready to cook, in an hour... build a fire in that bad boy ... btw .. very nice set up you have .. will last a lifetime
