Sausage and snack sticks

They had a few kinds and sizes of hog and sheep casings.. it's real close to my house.. I can get there in 2 minutes. They sell wood and chunks..charcoal. all kinds of cryovac stuff.. brisket etc.. Nice place.

I don't know about the Ferrari brand, but the AC LEGG stuff is my go-to brand!!!!!!   Their #116 snack stick mix is good straight out of the bag, and also makes a great base for adding other modifications/spices for different flavors.   I've not used the Hi-Mountain jerky kits, but I have used their stick and summer sausage kits.  I found both needed a little something else and the flavor was sort of "meh".....

I keep the AC LEGG #116 snack stick and #10 breakfast sausage on hand pretty much at all times and either can be modified by adding extra flavors. Owens BBQ also makes good mixes and I have used them as well.  Their honey BBQ is a little sweet for my taste, but my co-workers love it.  Their Chipolte Wildfire is good if you like any heat in your sticks (and it's not too much heat, just a bit on the back end).

***WARNING*** I just googled "Ferrari Spices" and when I went to the Ferrari & Son's Spice website my Malwarebytes software went crazy.  Apparently there is a malicious program piggy backing on their site.  It blocked it and the site.  Just something to be aware of (I doubt the owners have anything to do with it and are probably victims as well).
