Hi All,
Got my 30" MES a few weeks ago, and have attempted two Boston butts and some babyback ribs. The first butt/first smoke wasn't such a hit--tasted great, but disappointingly tough to pull. That's when I found this site. Second butt was a huge success (wrap it towels and put it in a cooler, you say? **Mind blown**), and the ribs were a hit as well.
Experienced home cook, new to smoking. Excited to convert/combine my tried and true recipes and methods for non-smoker pulled pork (slow-cooker), ribs (oven), and jerky (dehydrator) to come up with new versions using or including the smoker. Not to mention all the other things I'll be trying, too...
So much info on this site--it's amazing. Look forward to learning, contributing, and eating!

Other fun factoids:
-- Dracut, MA, just south of the NH border
-- 30" MES w/accompanying cold smoker (haven't used the cold smoker yet)
-- Using various woods chips so far, A-Maze-N on the horizon, I'm sure
-- Other favorites to cook: soups, stocks, sauces, fresh pasta, baked beans, breads
-- The one thing that's conquered me (so far): homemade mozzarella
