Will start with a flat iron steak seasoned with my Kickin Honey Maple Rub and then cooked in the smoker with apple pellets. I plan on either slicing it or maybe even some semi burnt type ends and make a grilled wedge salad with blue cheese crumbles, With mashed taters and roasted corn also with applewood smoked bacon.

But that could all change and I just eat it if this steak is done around lunch time lol.

Rub is made with a few other spices but main ingredients are smoked applewood sea salt/cane sugar/maple sugar/dry honey and  touch of cayenne pepper. I used  the cane and maple sugar in place of brown sugar so its not in addition to which would probably make things on the sweet side.  The smoked salt and maple/honey mixture give it a really nice smokey/sweet flavor and the pepper just a tad of zing.

bacon is done and meat is in but i dont think its gonna make it long enough to be dinner. lol maybe that was my subliminal thoughts the whole time and im having salad for lunch lol

 
well not as planned but still a great meal ( to bad the rest of the family missed out lol) I Went with a southern type rice with corn and beans. Then I put the meat on some romaine and then actually made little lettuce wraps with the meat and veggies.
