My wife gave me a new 18" WSM for my birthday last weekend. I did a couple of 3-5hr burns in it last weekend to get her seasoned. Been waiting all week to throw some meat on!
I decided to do some chicken legs since I read that the WSM tends to run hot the first few smokes. I didn't put water in the pan so I could try to avoid the rubbery skin. Had no problem getting the smoker started using the minion method with 3 chunks of apple wood for smoke.
While the smoker was getting to temp, I gave the legs a dusting of rendezvous rub and let them sit out.
Here they are one hour in at 275-300 degrees.
I took them off about an hour and 45 minutes in and put the grate directly over the coals to crisp the skin.
And here they are sauced and plated with some green beans and an ice cold beer. Need a cold one on a hot day like today. I knew they were good when my daughter said she had a new craving. She's the biggest fan as well as the biggest critic of my cooking. Needless to say, I think I'm really gonna like the WSM!
