My name is Dave. I live in Salem Oregon. I came here because I feel I could always learn new stuff when it comes to creating tasty meats and treats. I hope to learn a lot while cruising these forums. If I can add to it, I would be more than happy. I got into smoking because I won a free electric Masterbuilt Smoker. It just kind of took off from there. Trial and error and a lot of reading. My first batch of jerky apparently was a success. Friends and family couldn't stop talking about it. (apparently my marinade is to die for, which I obtained from a good friend who got it from an Islander) Since I received such fanfare about it, and liked the feedback, I started smoking all kinds of things. Some fantastic, some not so much. There are still many things I haven't smoked, but I would like to learn, so here I am. One thing I am learning, is this is a food science so to speak, from marinade, to heat, cut, moister and smoke. Which by the way is the degree my son is working on (food science), so maybe he could help me some more when he gets out of school. One day, I would like to own my own jerky business. Only problem is, that I've noticed, its a pretty saturated market, so I know it wouldn't be easy. Possible, but not easy. Anyhow...thanks for reading my post.
