Hey Fellas .... I'm not new to smoking food , but I really need to expand on my skills . I'm a retired welder , 4 yrs now , from a world famous factory here in Niagara Falls NY , for 36 yrs. During my free time I would fabricate grills and drum smokers for myself and co-workers. I always used new drums , open tops or bung type . I even made some out of 316 SS , I was a certified welder , lots of x ray work . I really miss my job , I loved my job , the things people would bring into work and ask you to fix for them , a WW2 russian machine gun cut in three pieces with a cutting torch . I did it , never will work, i made sure , but turned out beautiful . My favorite were the obsolete '30s farm tractor parts , cracked and broken exhaust manifolds .... yes , miracles .... Only once I got mad at someone , guy wanted me to weld SS filler wire together to make campfire marshmallow pokers , I offerd him 10 bucks to go away and buy a dozen . So with retirement comes boredom , no more Harley , no more hunting , no more dirt bikes and I refuse to sit in a lawn chair at the locale recreational park lake and fish with the old guys .! Titanium knee implants are life changing .... So im left with food , music and beer , and yes i am happy..... A few years ago our locale S_ ms Club moved to a new location, all display models of everything went on sale . i picked up a Smoke Hollow 48 in. propane model for 150 bucks , I retired my current UDS I had made and eventually passed it on to a very young family . For the most part I have been doing just pork type meats , but I have to expand . For fathers day I received a book , Smoking Meat and its a good book . I am definitely going to try some of these recipes .... Well fellas , I have to cut myself off , I love to gab , and I know it gets old fast sometimes ....... Rez
