Last minute brisket with help from the board! (Thanks guys)

I've got a 5.75 lbs brisket on the smoke right now.  I'm a definite brisket newbie, so I need some advice. When I pull it off to wrap around 165F, do I put any liquid in the foil?  If so, what liquid?  Should I wrap in foil or use a disposable pan and cover that with foil?  Thanks for any/all help. I've got about an hour before the wrap time.
 
Deep breath.  Ohmmmm............ohmmmm.............ohmmmm. 

You can either wrap in a disposable pan (easiest) or double wrap in HD aluminum foil.  I prefer double wrapping.  If you double wrap, it is better to have too much foil than not enough. 

With a 5.75 lb brisket flat you won't need much liquid in the pan or foil, about a half cup is all.  Personally, I heat the liquid in the microwave before adding it to the foil.  Heating the cold liquid prevents it from cooling the meat.

With brisket, when I wrapped, I liked to add only beef broth. Stout beer goes well with beef brisket too. 

Another trick is to skip the liquid and wrap with a full onion, sliced thin.  You can put the onion on the bottom or top.  I prefer the top.  I usually do this with chuckies and brisket flats.

I use beef broth and double wrap in foil. Did a point cut yesterday and it turned out perfect. 14 hours at 225
 
While on the smoker I have never pulled it to wrap until this last weekend. I think I pulled it late about 179 then double wrapped in butcher paper and back in until 203. Pulled it and wrapped in more paper then towels and put in cooler for 3 hrs. Sliced and served it. It was good but I am not sure which way I prefer. In hindsight I think I would like to try some liguid as well next time. Here is a sliced shot. 


  It was moist but I felt it was overcooked a bit and it dried out as it sat in the pan while people were dishing. I'm thinking next time to start checking it with the toothpick at 195 and see what happens. I have had good luck either way so far. Good luck, I'll be watching...
 
It turned out great.  Competition pull on the brisket.  I double wrapped with no liquid. Next time I think I will be adding a little stout beer. All things considered though I thought it was great.
