Masterbuilt 30" electric here.

I usually only do one shoulder, but my wife is planning a bunch of people over for the 4th so she wants me to do two.

Usually it takes one shoulder X time at Y temp to be completed.

Do I need to add significantly more time, pretending like its one giant shoulder, or will the time be similar to doing one, since they are about the same size?

Time is based upon each piece of meat, not the cumulative total weight.  Let's say your butts take an hour and half per pound.  If you have an 8 lb'er and a 10 lb'er in the same smoker at 250F, the 8 lb'er will be done in 12 hours, the 10 lb'er 3 hours later.  Those are just example times, not real times.

If you have one 18 lb piece of meat, then it would take 27 hours.

My only concern, having never used an MES would be proximity and positioning. If you can put them in side by side with a gap between them you'll be good. But if they're crammed in together or stacked virtually on top of each other then that could slow you down.

Excellent, that is what I figured, but wanted to check because I would have some very hungry people otherwise.

I should also have room to do them next to each other.

Thanks!
