Hello everyone. I started smoking trout on a cheap charcoal smoker I got for free, when I worked at a trout hatchery. Five years later I am a new dad. And needed a new hobby that entails being at home. While visiting my parents I noticed my dad got a Mes 30 and was blown away with the ease. It was perfect for me with having a small child and went out and picked one up along with the cold smoking set up. I love this thing. I have been making ribs, pulled pork, jalepeno poppers, fattys, and turkey lunch meat. I use it non stop. Excited to keep on learning with all of you.
