Was at the local store this morning and saw the had porketa seasoned pork loin for a $1 a pound. Pick up a 4.5lb roast to throw in the smoker for dinner. I figure since it was a loin it only needed to be cooked to 145-150 it.  When I took it out of the package I noticed it had a big bone in it. I then noticed that underneath pork loin, the package also said sirloin roast. Am I going to be okay cooking this to approximately 150, or is this going to require a high it temp to break down connective tissue?

the safe internal on pork is 145 so anything above that is good 145-160 is perfectly fine.  what are you trying to do just cook it like a roast or make pulled pork with it

if you are slicing for chops, i would go with 150-155 and let rest to around 160 IT. the ladies of my house don't like a real pink pork so i'm forced to over cook a touch..If i wasn't cooking for them i would cook till 145 and let rest to about 150ish.

i have made sirloin roast in pp when its that cheap. and it is nice. you may want to inject creole butter or something similar to make sure it doesn't get a touch dry but i like the leaner cuts (which is relative) to make a good pulled pork it is a nice switch. if you go that route go to at least 196 or so and let rest to above 200-205 IT.

either for $1/# you cannot go wrong!
