Just found this forum and can't wait to learn and share more.  Been doing gas/charcoal grilling for years but just bought a Big Easy and MES 30 and definitely need advice as I move into this new realm of meats.  Was at my sister's in-laws in Mississippi and couldn't believe what was cooked in those two items.  Next week, bought them both and now need to figure them out.

Can't wait to learn more and look forward to being part of the forum.  Cheers!
