Good Evening!

To start, I want to thank all those have served our country.  We need to remember them this weekend, many of them gave their lives so that we have the freedom we do.  Thank you and God Bless our troops of now and past.

Tonight the family wanted some chicken.  Here is what I gave them:

Made up an injection of our homemade stock, pickapepper sauce, and vinegar

Injected the Bone in Breasts

Dusted them with my chicken rub

Used my son's rub on the legs

Chopped up some panchetta

Made some MOP with my BBQ sauce, Ginger Ale, and Apple Cider Vinegar

Cut up and seasoned some Brussel Sprouts

Panchetta in the Cast Iron Pan on the Weber.

Legs on the grate and Breasts hung in the PBC

Sprouts into the Cast Iron Pan

Legs, ready to eat!

Decided we wanted a side of pasta, the pasta is cooking in some of our homemade stock, which is made with veggies and bones from previous smokes.  Gives a deep flavor to the pasta.

Pasta done.

I mopped one breast for my wife, and I like mine with no mop.

So juicy and good!!!

It all turned out awesome, forgot to take a picture of the sprouts before we ate them.  Drizzled some aged balsamic on them.  It all turned out wonderful!

Smoke ON!
