Hi folks
I'm new to smoking...have a Hark Electric smoker and have so far stuffed up a pork belly (too much smoke, not enough cure) and fish (too long in and over did it). But we're getting the hang of things.
I have so far used hickory and alder, and have just got in a supply of beech. I am trying to create my own kaiserfleisch and/or kassler, but haven't got there yet...does anyone have any special clues on this?
Any help will be greatly appreciated.
