This weeks travels had me only in Texas, so I drove to the 3 plants I had to visit. I don't mind driving most of the time, but the traffic this trip sucked!

Knowing I'd be home today, I stuck a couple of chickens into buckets to cure last Thursday night.


Got home this afternoon, kissed the bride, and then went to the frig to get the birds. Pulled them out of the buckets, rinsed them a little, let them drain for a few and then stuck them in a sock.


Into the smoker with Cranky blend at 260 degrees!


Back later, now it's time to rinse a couple of pork loins and get them into UMAi bags, but that's another thread all its own!

Spent two plus hours in the dentists chair today. My chicken is coated with panko and sun dried tomatoes from a local deli. I'm phoning it in tonight. [emoji]128514[/emoji]
 
I am doing some wings.   Not going to be as purdy as your whole birds.
 
Sorry folks, no really good shots of the birds plated up, but here are a few after coming from the smoker and while prepping one of them for our elderly neighbors.

Ban me if you wish, but I love chicks in net!


These birds were smoked in ham bags hanging over 265 degree heat with my blend of pellets.

Once you take the birds out of the bags, you see the "tan lines". That shows that a good smoke happened. Why do I say that? Well, when I brine/cure birds, I don't rub them or season them in any way. These birds are all prep and smoke, no coloring from rubs or other seasonings. Yeah the skin is tough and rubbery, it we don't eat it...

The juices on the cutting board say it all! These birds were taken to 170 in the breast since our neighbor freaks out over any "red" on the joints. I had to wipe up juices from the edge of the cutting board!


Packaged up for the neighbor's, and time to eat for us!




I'll try and remember some plated shots next time.

I wish I could find the netting that I used for several years that had bigger holes and gave a great pattern.  But now after about 30 minutes in 225° heat, they drop off the hook.  No longer high temp...
