When I'm done using my 732, I always coil up the probes & return them to the original package. Should I be leaving the stretched out? Maybe hanging in the smoker? I'm concerned that by coiling them back up, I my be stressing the wires needlessly. How do you all store your probes? Does it matter?

I don't know but I'm putting mine back in the packaging as well and they uncoil just fine. I haven't noticed any stress yet.

I use mine a couple times a week, SOOOOOOO

They stay where I last used them.

Clean the probes before the next smoke.

But to answer your question, it wont hurt the wires keeping them coiled.

I have had one of my Mavericks for 6 years, I finally bought new probes last year.  I coil them up and put them back in the box (which is now held together with duct tape).  I use them almost weekly, I think the most damage is done from having the smoker door / cover closed on the cables.

Smoke ON!

Mine spend time outside down the MES vent and several years of my wife tossing the probes in a drawer. No issues so they are pretty tough...JJ

I coil mine and keep them in a zip lock bag. No problems. I have a probe inlet in my CC. It is a cable inlet connector from the electric dept at Lowe's for just a few bucks.

I have 3  ET-732's and abuse the heck out of them, almost as much as c farmer...LOL.   Just toss them back on the shelf when I'm done.  No coiling, no  nada.  Just clean the probe tips before I use them again.

Same here I coil them each time & close the smoker door on them without any problems so far.

If you get the connection wet where the wire & probe are joined, then you will have problems.
