Hello All,

I recently inherited a GrillPro Vertical Smoker. It has the charcoal box on the very bottom, then the smoke box, then a water basin. The Charcoal box sits right on the bottom of the smoker. I am not new to grilling, and utilizing my grill as a smoker, but I really struggled to maintain a temperature yesterday when I used my smoker for the first time. I was using the hardwood charcoal which burns very hot very fast- so maybe I just need to use regular charcoal. The flavor was great, but it took way too long and I still had to finish up on the grill. I am picking up a descent thermometer Thursday to monitor the temperature better. But it seemed to heat up nice and hot, but ten minutes later i would need to put more charcoal in. I went through an entire large bag. I tried vents open, closed, partially open, ect. I am going to try regular charcoal Thursday, but does anybody have any advice for me?

Thanks

Meg

Welcome to the forum Meg!  I'm not familiar with your smoker, but general smoker rules apply.  If the fuel is burning too hot and fast, light less from the start and control the temp with vents.  If too much charcoal is lit, it's hard to control.  The fire needs air to burn hot, if you restrict the vents, and it's still hot, you may have air leaks.  Hope this helps some.

Welcome, Meg.

I'm with Mike here. Not familiar with your particular setup, but Mike's suggestions are very valid. I'm thinking too much fuel at any one time.

As a Wisconsin guy, I'm always interested to hear what part of the state you call home.

Good luck and happy learning

Yep....that is a great place to start.

Welcome to the forum!!

I am from Northeastern WI. Where are you from? This is not a very top of the line smoker, but I am very determined to get it to work!

Meg

Central WI. Just south of Stevens Point.

One thing I have learned is that the smoker doesn't have to be fancy to make great food. I'm sure as you use it you will learn what works for you.
