Last night I coated with mustard, did a light rub coat and wrapped in Saran Wrap overnight

This morning when taking out of the wrap I put a bit more rub on and then onto the smoker around 7am

Coals are dieting at 195 IT ... Wrapping in foil and putting into oven at 225 until IT is 200, then will pull and rest ... I am 4 hours till dinner time so not in a hurry
