Long time smoker... first time caller...  er... I mean, first time in this forum, I've lurked a bit over the years... 

 But anyway... recently I've been trying to learn more about curing of meat and such... the more I read... the more I think I know, but at the same time, there seems to be a huge amount of misinformation and contradictory information out there.

 I think I have some of the basics down and think I do things relatively safely... but I'm sort of becoming almost obsessed with trying to really understand stuff to the point where I am confident in the safety of the things I'm making...

 Never hurt anyone with any food I've cooked to this point, but wanting to make sure I keep the streak alive.
