Tri Tip and poppers

Smoked a tri tip and poppers this weekend. Applied rub and in the fridge it went for the night. Got the Brinkmann LE up to 225-230 going with red oak. Pulled it at 130 IT and let it rest for 15min. The poppers, well they were just for fun but they were pretty darn good too.

It was a good day.

Thank you Al but I must be honest. The Tri Tip was a tad bit chewy. I'm still pretty new and am curious how much the grade of meat has to do with it's end result. This was purchased from a grocery store meat deli, until now I never thought to ask the butcher what grade they sell as it is not clearly marked.

In my opinion, any grade of meat can be cooked great. Just need to know how and practice

Looks tasty! Did you cut the meat against the grain? Tri tip has multiple directions the grain runs. If you ever had a flank steak the grain runs in one direction and is easy to see,my wife made us some Mongolian beef from flank and cut it the wrong way it was amazingly hard to chew.

b-one is the TT expert! Tri tip has grain in two different directions. I'll bet that was the issue, because the meat looks cooked to perfection!

Great looking meal. I buy choice grade Tri tip. I buy it from our restaraunt supply in bulk. Occasionally I get a piece that is tougher than the rest, but for the most part it's all pretty tender.

Slicing is key, and when I zoomed in on your photo it appears that the two pieces you have there were sliced across the grain. It is true that Tri Tip has multi-directional grain. There are several good tutorials here on how to slice a Tri tip.

Your poppers look tasty. Add some bacon on top next time and you'll have joined the ABT club!

Looks real good. I did one last week in glad there is a butcher shop near me that always has them as they aren't as popular in buffalo as they are out west.
