Just started to get into smoking there's not a lot down under so I'm hoping to learn a few things and get more people down here into it I've started with a char griller pro with a sfd just cured it today and it went well can't wait to smoke my first brisket

I look forward to hearing about your smoking adventures.  What part of Australia are you from?  I ask because I'm wondering about the food/meat you have available in your part and what is unique to your area compared to the rest of the world.

I'm from NSW Hunter region our butchers here aren't up to the cuts of meat needed for smoking but are slowly getting there I source mine from local farmers great beef and pork.
