I am completely new to smoking I bought and Oklahoma Joe's Highlander I got it home I smoked a ham and a pork loin when I got them off of the smoker all of the meat had a metal taste to it. I tried to smoke some meat a few months ago in a trash can smoker that I built and I got the same scenario so obviously I'm doing something wrong can somebody inform me of what it is?
 
The taste you describe could be creosote, it is caused by heavy white smoke.

You want thin almost invisible smoke most of the time.

Could this be from using fresh cut hickory and not seasoned? Fresh cut hickory is all I had.
