Sea food turkey

A while back someone posted a recipe where you boil turkey or chicken in sea food boil then finish it in the oven(sorry couldn't find it). I thought maybe better to use as a brine. Started with about 6cups of Zaharias sea food boil 1T kosher salt 1t cayenne pepper and 1t of old bay let sit for 6 hrs in brine and injected after a couple of hours.would of done at first in the brine but had to check out the gun show. Wife said on the grill I said smoker so here it is on the grill. Seasoned with spog

Sorry typo 6 cups of water and 1 bag of Zatarains if this was chilie r recipe I can't believe it was spicy enough for him, but he has excellent recipes looking forward to trying it sorry cr no disrespect to your original thought:beercheer:
 
Lol. Thats all good. I just enjoy new recipes and food. And I love spice. always on the look out as a lot of Canadians are mild spice people, Going south is always a great time. 
 
If you can find it, Chackbay crab boil is the best imo. That's what I use for my crawfish and shrimp. It's a powder not a liquid. I use Zats liquid in combination with the chackbay powder.

The end result I over cooked it by 10' still very moist tastey definitely do it again wife agrees. What I would do different first brine and inject for at least 24hrs longer for turkey. It wasn't to salty so I don't know about rinsing but definitely dry it and allow to air dry skin was crisp but not crispy and maybe play with adding additional spices not much. Last of all not listening to the wife:wife: this meal should of been smoked:grilling_smilie: happy new year my friends

Ps Cajun cannon never heard of that I'll have to see if it's available this far north thanks for the heads up
 
Chackbay seasoning is hard to come by anywhere besides Louisiana. When I go back down to Louisiana to visit I usually buy a case or two

I understand it's very hard to get stuff shipped from Louisiana they have strange tax laws or used to thanks for the pont
 
The turkey sure looks good from here!

I like the idea of using the crab boil seasoning in the brine.

Maybe if you used Cajun seasoning for a rub you would have gotten the flavor you are looking for.

Just a thought.

I use Cajun seasoning on just about everything.

I agree al Cajun seasoning is definitely a staple in this house just wanted to try it somewhat naked for the trial run

Chackbay seasoning powder is my favorite, also. Far and away, the best I've ever tasted.

I get mine from Amazon where it's readily available with two offers. A single 12. oz. bag is $11.99, or 3X12 oz bags for $19.99. Neither offer is eligible for Amazon Prime.

I have no doubt that the Amazon price is more, maybe much more, than what you would pay if you were a local, but since I'm very far from being a local, I consider it a bargain.
