It's been a busy weekend. Have done 10 lbs of snack sticks, 10 lbs of pepperoni, and 15 lbs of summer sausage. And for my latest poultry creation, I tried out smoking a turkey in my WSM 18.5" smoker. I injected with a creole butter that I picked up at Kroger. I seasoned with a little cajun seasoning, thyme, rosemary, basil, and oregano. I didn't have any fruit wood to smoke with, so I just used Hickory. I put two chunks of wood in, which gave off plenty of smoke.
I must say, this was one of the easiest smokes I've done. I had the smoker running between 300 and 350, with all the vents wide open. It took about 3.5 hours to smoke this 16 lb turkey, and it turned out fabulous. Great flavor, and very juicy. It was so good I may be smoking another turkey for Christmas.
