Hello I am new first smoker here masterbuilt 40 electric I did a 8lb brisket today. Not the best but was ok a just bit dry thiking i overcooked
I trimed most fat off. I put honey mustard on than my rub of choice. Then put in fridge 4hrs. Set smoker up 140 and filled water tray added a splash of apple cider vinegar with water. Cooked 8hrs with chips added 3trays. Next I added bbq sauce and wrapped in foil heated brisket to 160 in about 1hr . Smoke flavor was good just no smoke ring on brisket. Looking for input for improving thanks

Welcome to the forum.

First of all, you won't get a smoke ring with an electric smoker.

Second, if you only heated the brisket to 160, it had to be really tough.

They need to go to about 205 to be tender.
